Lipovac Cellar is a unique production and exhibition tunnel. Everyone is welcome to visit the winery and see how the wine is made and stored. You can try young inox drinks and a rich, aged amphora wine. The production features three lines.


Inox

Grapes are fermented on the main, classical line and are then put in a stainless steel container with a capacity of 1,5 to 10,000 liters.

Barrique

The second technology is called "Barrique." It implies the ancient art of using oak containers. French oak barrels are used only for three years. After that, they become useless and have to be exchanged constantly.

Botti

Botti are cylindrical shape barrels made of new French oak. The capacity of barrels is 400 liters.

Wood gives the wine fine and elegant aromas of vanilla and cloves. It is believed that within the first two years, the wine gets most of the aroma out of these spices. Thus, barrique and botti and regularly updated.

Tonneau

Bordeaux term for barrels of a large volume equal to the volume of 4 barriques. In Italy such a term is called barrels of 550 liters and more.

Amphora wine

Amphora wine is a third, exclusive line. The wine is made by maturing in clay amphorae.

«From earth to earth» - philosophically says Stefano Casadei, our oenologist, about this wine. It means that the grapes grow in the ground, ferment, and mature in it.

Kvevri

Kvevri is also an amphora wine. It is characterized by the fact that an amphora is buried in the ground. This wine making technique is known since the times of Urartu and dates back to about the 8th century B.C. Since 2011, it is included in the UNESCO List of Intangible Cultural Heritage.
